As /r/halflife's official HL2 Fanboy over on reddit, allow me to sum it up in two sections. This isn't mentioning the incredible and nigh flawless storytelling that Valve uses in HL2.
The weapon arsenal:
The weapon arsenal is huge. Sure, it may seem like only 11 weapons, but you can use them in conjunction with each other to make it more.
The pistol falls out of favor as an assault weapon the instant you pick up the SMG. However, it is used as a combo weapon later on. You can activate barrels from a further distance than the SMG without using valuable crossbow or revolver ammunition. You can one-hit antlions if you knock 'em over with the gravity gun first. In Ep2, it's the best weapon for detonating the strider busters.
The bugbait may seem only useful temporarily. You can't summon the allies it gives you after a certain time. Dead weight, right? Wrong. Throwing it (which would normally tell the allies (naming no names so to not spoil it for you all) to attack that location) can stun combine soldiers long enough to switch to something lethal.
]The game design:
Half life Two puts you into such an entirely immerse experience you can hardly call it such a simple word as a "game". The intense detail that Valve has put into the textures, modeling, and game design is incredible. I'd highly suggest you take a look at some of the developer commentaries that can be accessed from the main menu where they discuss immersion in detail.
The gameplay is incredible too. As stated before, the weapon arsenal can be used in conjunction with itself to be bigger than it seems. This makes you feel like you're not just using quick timing or skill, but your mind too as well. The gameplay is surprisingly open. Very few enemies have resistances or weaknesses. You feel like you're outsmarting an enemy, not exploiting him. The unique feel of the weapons and the satisfying sounds that they make is incredible too.
Perfect pauses in between the action make us feel perfectly in balance. You see it most often in the airboat chapter. You'd get the hunter chopper droppin' mines on ya, and then you get a little section of solitude and peace to restore your health and your racing heartbeat. Again, check out the dev commentary for more on that, and you'll hear about the plights of the playtesters when the game was rickety and before perfection was handed to us.
